Vegetable Quesadilla

Usually on Thursdays, I plan to make a non-Indian dish. This is my way of learning something new and adding some innovation to it. But on one of these days, I was too busy with some other stuff and couldn’t prepare an exclusive meal. Hence, I thought of making quesadilla, a simple , easy yet divine recipe when you crave something tasty. Also, it is a great appetizer when you have friends coming over.
I made it using whatever veggies I had available at home, you can always be innovative by adding your choice of veggies (or even nuts and fruits) to give an extra twist. Also, if you are a meat lover, you can replace these veggies with whatever meat (cooked) you like. Many people swear of using leftover or dry chicken in quesadilla. I have used panini-maker to grill my quesadilla, you can always use a pan to do the same.

Recipe:

Ingredients:

1/2 cup chopped bell pepper
               (red/green/yellow)
1/2 cup chopped zucchini
1/2 cup chopped onion
1/2 cup chopped mushroom
1/2 cup chopped spinach
1 Tbsp oil
6 Tortillas
    (I have used dried tomato tortillas)
1 cup grated cheese
           (cheddar/ mozarella/ monterey jack / mexican blend)
Salt to taste
1/2 tsp Black pepper

Step 1: Saute Veggies
Heat oil in a pan. Saute all the veggies with salt and pepper till tender.Step 2: Cook Tortillas
In the same pan, lightly cook tortillas. 20-30 secs each.

Step 3: Prepare Quesadilla
1. In the same pan, or in Panini-maker, place the tortilla. Layer veggies on top of it.
2. Add 1/3rd cup of cheese on top of veggies. Cover it with another tortilla.
3. Cook until golden on both sides, approximately 2-3 minutes. You can add some oil/ butter, if you want them more crispy.
4. Remove quesadilla. Repeat the same with remaining ingredients.
5. Cut each quesadilla into triangles with pizza cutter or knife.
