Spaghetti with Alfredo sauce

I have always loved Italian food. When in doubt, always go for Italian food and it never disappoints. I often love to try different Italian sauces and different kinds of pasta. But nothing beats a regular pasta with Alfredo sauce (specially if you are a big cheese fan). Alfredo pasta can easily be made into a one pot recipe. I’ll share that recipe soon as well.
I have added different vegetables to it. You can always replace them with meat or nothing and enjoy just the cheesy and creamy pasta.

Recipe:
Serves 2.
(If you are a big pasta fan like me, you might as well finish it alone :p)

Ingredients:

Spaghetti 2 servings
Bell Pepper, Mushrooms, Zucchini, chopped
                                                          1/4 cup each
Corn   1/4 cup
Spinach chopped 1/4 cup
Garlic, minced 2 tsp
Olive oil  1 Tbsp
Salt to taste
Black pepper 1/2 tsp
Butter   1-2 Tbsp
Milk 1/2 cup
All purpose flour 1 tsp
Cream 1/2 cup
Parmesan, grated 1 cup
Parsley, 2-3 sprigs (optional, for garnish)

Step 1: Boil Pasta
1. Bring a large pot of lightly salted water to a boil. 2. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Step 2: Saute Veggies
1. In a pan, heat olive oil. Add garlic and saute till it turns brown. Do not burn.
2. Add all the vegetables. Add half of salt and pepper and saute till tender.
3. Remove veggies from the pan.

Step 3: Prepare Alfredo Sauce
1. In the same pan, add butter. Once melted, add milk.
2. In a bowl mix 1 Tbsp milk and all purpose flour and stir. Add it to milk in pan. Stir.
3. Lower the heat. Add cream.  Stir in cheese until melted; this will thicken the sauce.
4. Add pasta to this sauce. Add sauteed vegetables. Mix in properly so that all of pasta is covered with sauce.
5. Garnish with parsley and enjoy.
