Vegetable Chow mein

Chow mein, even though are Chinese stir-fried noodles, this recipe has more of Indian touch. This is one of the famous Indo-Chinese  street food in most parts of India. Noodles stir-fried in Indian spices and access of soy-sauce are loved by many in India.

This is one of those recipes in which any kind of vegetable can be added. As a street food in India, usually julienne of onion, green pepper, carrots and cabbage used to be added. But if you want to add anything different, it is totally up to you.According to your taste, all the sauces (soy-sauce, chili sauce, ketchup) and vinegar can be adjusted.

Recipe:
Serves 2.

Ingredients:
200g noodles
2 tbsp vegetable oil
2 tsp garlic, chopped
1/2 cup onion, sliced
1/2 carrot, julienne
1/2 cup green bell pepper, julienne
1/2 cup broccoli, chopped
11/2 tbsp soy sauce
1 tbsp ketchup
1 tbsp chili sauce
1 tbsp vinegar
salt to taste
1/2 tsp black pepper
2 tbsp scallions, for garnish
Step 1: Boil the noodles.
1. Bring 4-5 cups water to boil. Once boiled, add pinch of salt and noodles.
2. Boil it as per instruction on the package or for about 6-8 minutes.
3. Drain and run under cold water to stop further cooking.
4.  Add 1/2 tbsp of oil to prevent them from sticking to each other.Step 2: Saute veggies.
1.  Heat oil in a pan on medium heat.
2.  Add garlic and saute for 15-20 seconds. Do not let it brown.
3.  Add onions. Cook till they turn translucent.
4.  Add all the veggies. Cook till they turn soft. Do not let them turn mushy.
5.  Add sauces and vinegar and mix well. Add salt and pepper to taste.
6.  Add noodles. Toss them well so that noodles are coated well with the sauces. Once mixed properly, add scallions and serve.
