Roti, phulka, chapati..
It has numerous names and it is one of the magical food all north Indians relish with almost every curry and for every meal of the day. Whole wheat Indian bread is full of fiber and is staple diet of many north-Indians. Yet many people dread making a roti on their own as it involves many steps and each step involves a technique. This post is about the first step of making a roti, i.e , kneading a dough. Once, you master this, you can make a variety of other Indian breads easily like puri, paranthas etc. This recipe is using whole wheat flour. You can use any flour you like. You will just need to adjust the amount of water for different flours.
Ingredients: 2 cups whole wheat flour 2/3 cup water 1/2 tbsp any vegetable oil or ghee 1 tsp salt (optional) |
Steps: 1. Take a mixing bowl and add the flour. Add salt. 2. Add oil and mix it properly. This will form a bread-crumb like structure. 3. Now add 1/3 cup water and fold in the flour. Try to bring the flour together. Add more water, not more than 1 tbsp at once, till you feel the need. (Do not let the flour become sticky. There should always be some dry flour at this stage.) 4. Keep on bringing the flour together. Once together, start kneading to make it soft. Continue this for 2-3 minutes. 5. Apply oil to your hands and press the flour dough. Now cover it with a cloth or plastic cover for 1/2 hr. Dough is redy. |
